WHAT I USED:
I used the recipe from CookingClassy.com and I got
all my ingredients from Tops Friendly Markets.
I made a double batch so this is what I used:
Batter
3 cups all-purpose flour
3 tsp baking powder
1/2 tsp salt
2 cups granulated sugar
1cup salted butter, at room temperature
4 large eggs
3 tsp vanilla extract
1 cup sour cream
Cannoli Filling
1&1/3 cups Mascarpone cheese
1&1/3 cup Ricotta cheese, strained slightly*
10 Tbsp powdered sugar - but I added two extra Tbsp!
Whipped Cream Topping
3 cups heavy cream
1 cup powdered sugar
4 Tbsp cocoa powder
1 tsp vanilla extract
6 Tbsp mini semi-sweet chocolate chips, for garnish (I used them in the cannoli filling instead)
MY FEELINGS:
I'm not sure how I liked these but I thought they were alright.
For some reason, after making the batter, it was ridiculously thick and
it didn't look like cake batter. I was dumb enough to use it and they cooked ten less
minutes than they were supposed to. That scared me because I knew they wouldn't come
out right. They were okay but I don't know where I went wrong with
them being so dry. They did take a while too so it was kind
of annoying how long they took just to prepare the whole thing. Overall,
they were okay. Not great, not bad. I don't think I'd totally recommend them though,
1 thump up, 1 thumb down.

I am excited for this one but I am going to alter the recipe a bit.
I am going to use box brownie mix but I will use the frosting recipe.
