Class's Favorite and Least Favorite Cupcakes

The class's favorite cupcake this year was the Cannoli Cupcake.
Honestly, I think this was my least favorite of all the cupcakes I've made (well, the three that I've made).

MY FEELINGS
This one was the most labor intensive and the most expensive. I liked the cannoli cheese topping and the whipped cream but I was not a fan of the batter. It was so thick and the consistency of like biscuit batter. They tasted a bit like biscuits because I didn't use enough sugar either. I think they were okay, but I wasn't a huge fan. Afterwards, I did eat the entire bowl of cheese. The marscapone cheese was $7.00 per container and for the recipe, I needed two of those. My dad was not thrilled about that. It also took way longer than it should've. I wish they could've been more appealing after I assembled them all too. They didn't look too pretty too eat.

CLASS FEELINGS
The class really liked them and I was actually kind of surprised. Mr. Currin said they were his favorite too. I am happy the class liked them but I didn't think they were anything special. The class did say that the batter was a bit dry but people liked the toppings, like I did too.

The class's least favorite cupcake this year were the Cookies and Cream Cheesecake Cupcakes.
Weirdly enough, these were my favorite out of the three.

MY FEELINGS
I thought that these cupcakes were super yummy and these were by far the easiest cupcakes to make. I would make these again in a heartbeat because I really enjoyed them. They were quite tasty and yummy. I was surprised that the class disliked these the most. I enjoyed these the most and recommend them more than anyone I've made.

CLASS FEELINGS
The class thought they were just OK. I guess I can respect that everyone has different opinions.

My Favorite Cake, Where and What...

Today's topic of interest is CAKE.
What's my favorite cake and who is it made by? Good question.
My favorite cake is vanilla layered cake with a buttercream frosting and cherry filling in the middle of the two layers.
My aunt's friend made my birthday cakes since I can remember and she makes the BEST cake. Whenever my cousin or I have a choice to pick our cake for our birthday parties we always get them from her. Regina's Cakes. That's the name that will forever be AMAZING.

REGINA IN A NUTSHELL
She makes any cake you could ever want and she makes them perfectly. She works out of her house and they are always so nicely done. This year I'm getting the vanilla cake I told you about with pink decorations. She does all decorations too and they are always pretty cute. I let her decide what she wants to do with decorations. FUNNY STORY
My cousin, who is 22 years old, literally throws a fit if his mother doesn't order a Regina cake for his birthday. I can't make fun of him for it though because I do the same thing. Two years ago, my parents forgot to order me a Regina Cake so they brought home a Tops Cake and I cried.. Yes, I cried. I'm not proud of it but her cakes are an addiction. An addiction that you have once a year for your birthday and a few times more for family parties and then you just wait until the next year.

LAST RESORTS....
When I can't get a Regina Cake or we just didn't order in time, I like when my Grandma makes me a cheesecake. She makes the best Polish Cheesecake and those are always yummy for birthdays. I always love grandma's food. I love the Carvel Ice Cream Cakes too. Those are fun for when I have friends over for my birthday.

Let's talk about brownies today...



 

BROWNIES
Something I have always loved as a kid was brownies. My mom likes to make them at 
random times and I love coming home to fresh baked brownies. 
I bet you're thinking right now, why did she change the topic? 
Why is this blog about brownies and not another recipe? Good question.. 

Quite honestly, I did not have time to make cupcakes or 
even brownies last night so my recipe is being put on hold until next class, which is
 Monday. Personally, my favorite brownies are just the box ones. 
I would take the Betty Crocker brownies over homemade ones anyday. 

PARTY BROWNIES
One thing I do with my brownies is I put a little extra water in them 
because I’m one of those people that loves sticky brownies rather than dry thick brownies.
 I honestly think that brownies are great for a quick snack or a classy dessert to 
bring to a party. If you’re going to a family party or what not and you need something 
quick to make up in an hour, bake up a batch of brownies and you can frost them with 
pink vanilla frosting and write something on it or just put some fruit or sprinkles on them. 

SNACK BROWNIES
Something I tend to do a lot (which isn’t good) is make brownie sundaes for my snack at night. 
Brownie sundaes with Panda Paws ice cream is the absolute best. I put 
some whip cream on it and chocolate sauce and it’s like heaven. I know this is 
kind of a random sporadic blog but brownies, I thought, would be a good topic 
to talk about for sugar lovers.

 Some other brownies that you can pick up at a local store have peanut 
butter chips in them and I honestly love peanut butter brownies but I know 
they’re not for everyone because a lot of people have nut allergies. 
I think that brownies are a versatile dessert and great for any occasion.

Cannoli Cupcakes

 
 
WHAT I USED:
 
I used the recipe from CookingClassy.com and I got
all my ingredients from Tops Friendly Markets.
 
I made a double batch so this is what I used:
Batter
3 cups all-purpose flour
3 tsp baking powder
1/2 tsp salt
2 cups granulated sugar
1cup salted butter, at room temperature
4 large eggs
3 tsp vanilla extract
1 cup sour cream 
Cannoli Filling 
1&1/3 cups Mascarpone cheese
1&1/3 cup Ricotta cheese, strained slightly*
10 Tbsp powdered sugar - but I added two extra Tbsp! 
Whipped Cream Topping 
3 cups heavy cream
1 cup powdered sugar
4 Tbsp cocoa powder
1 tsp vanilla extract
6 Tbsp mini semi-sweet chocolate chips, for garnish (I used them in the cannoli filling instead)

MY FEELINGS:

I'm not sure how I liked these but I thought they were alright.
For some reason, after making the batter, it was ridiculously thick and
it didn't look like cake batter. I was dumb enough to use it and they cooked ten less
minutes than they were supposed to. That scared me because I knew they wouldn't come
out right. They were okay but I don't know where I went wrong with
them being so dry. They did take a while too so it was kind
of annoying how long they took just to prepare the whole thing. Overall, 
they were okay. Not great, not bad. I don't think I'd totally recommend them though,
1 thump up, 1 thumb down.

CLASS FEELINGS:

"I liked the frosting a lot. I had a weird consistency though."
"The bottom is too dry, and the frosting is too wet. Get it together."

I am excited for this one but I am going to alter the recipe a bit.
I am going to use box brownie mix but I will use the frosting recipe.
