Cookies and Cream Cheesecake Cupcakes

WHAT I USED:

I used the recipe from CookingClassy.com and I got all my ingredients from Tops Friendly Markets.

I did one and a half batches so this is what I used:
-36 Oreo Cookies (Family Pack)
-3 (8 oz) packages of cream cheese (Tops Brand)
-3/4 cup of granulated sugar (Domino)
-3 large eggs (Tops Brand)
-2 cups of white chocolate chips (Nestle)
-about 1/2 cup of heavy cream (Tops Brand)
-1 & 1/2 tsp. of vanilla extract

MY FEELINGS:

I think these turned out really well and the class really enjoyed them.
They did take a little bit longer than the 20 minutes it said
it would take but I was very pleased with the overall product. It was also a really
hot day so it was not fun cooking while I was sweating. I did make it completely
myself with no help from my parents and I was happy overall with the outcome of it.

CLASS FEELINGS:

The class shared their feelings on the cupcakes and a sheet was passed around to get their rating and comment. The sheet was anonymous and I got honest feelings from the class.
A few comments that I recieved were...
"They were delicious! I would eat a million!"
"They were yummy, but had a sad, deflated appearance."
"They were delish! I don't even like cheesecake, but so good!"
"So yummy! Bring more kinds! :)"
"Good, but they had a weird texture."

CUPCAKE FOR NEXT TIME....


My next cupcake will be a cannoli cupcake and this will definitely be the one that
takes the longest to make. It looks absolutely amazing so let's see if I can do it justice!
I think that it should come out really well and I am very excited for this next one.

Red Velvet Cupcakes


WHAT I USED:
  • Tops Brand Red Velvet Cake Mix
  • Betty Crocker Cream Cheese Frosting

MY FEELINGS:

This cupcake was pretty easy to make. I feel bad that I made it from scratch but
I think it turned out really well. It took me about 15 minutes to make the batter and
about 20 minutes to cook the first batch. I took them out to let them cool before I took
them out and then I put in a second batch and it took 20 more minutes. I let them all cool
and then my mother frosted them for me because I didn't get home until 10. They were really moist
because I like to add a little more water into the batch. I do prefer cupcakes from scratch
better so the next one will definitely be one from scratch.

"They were quite tasteful."
"I liked them but I couldn't really taste the red velvet. Could be my cold, though...."
"I do not like red velvet." (Still rated an 8)

CUPCAKE FOR NEXT TIME....

Next class, I will make a cupcake that I think the whole class will enjoy.


 
I will be making Oreo Cheesecake Cupcakes. The recipe is above if you want to try it before I do! I will be reviewing  a cupcake yet again but this time with the entire class instead of just 5 people (and Mr. Currin)... This is a very simplistic recipe but it does take quite a bit of time. It's going to take about five hours to chill so I am going to do it on Thursday night for Friday and let it chill in the fridge until then. I assume it will turn out really well and I am definintely looking forward to this one!

Welcome to my Cupcake page!

I bet you're all wondering what this blog is about...

So basically, I will make a different type of cupcake every class and each person in the class will get the chance to have one. I will give you my recipe and pictures on what I used (some will be from scratch and when I don't have the time to do that, they will most likely be from a box). On the days I don't make a cupcake, I will write about a different tasty dessert treat.

LITTLE BIT O' BACKGROUND...
Every since I was younger, I have loved cupcakes and at family parties I would run to the cupcakes and grab whatever cupcakes were there. They were always something I have enjoyed (along with chicken wings). I have a passion for making cupcakes and baking in general has been something I've always enjoyed. My father is one of the best bakers I have met and someday I hope to maybe do something with food.

My cousin's girlfriend recently got accepted into the Culinary Institute of America and she makes the best cupcakes I have ever eaten. She loves what she does and has really inspired me to start this blog (and the fact that I had to as a grade for this class). She hopes to open her own cupcake bakery and maybe I'll have a job there someday!

HOW MY RATINGS WORK...
Each person will judge the cupcake on a scale of 1-10 and I will average all of the ratings out and get the final class rating. On my last blog I will determine what the best cupcake was and the best things about those cupcakes. I will also interview and get comments from three people each class on how they liked the cupcake.

This is a blog for cupcake lovers or people who just want to try new recipes! I hope you enjoy my blog, leave comments and let me know what you'd like to see more of!
